OTHER PREPARATION TRICKS

Always dissolve Gelatin Dessert in boiling water, stirring for 2 minutes to be sure to dissolve all crystals. A rubber spatula works well to dissolve crystals.

For 30 Minute Set Method, dissolve 1 pkg JELL-O Gelatin Dessert in 1 cup boiling water. Add 2 cups ice cubes. Stir until gelatin thickens, about 3 to 5 minutes. Remove only unmelted ice. Chill 30 minutes.

To flake gelatin, prepare gelatin as directed on package, reducing cold water to ¾ cup. Pour into a shallow pan and chill until firm, about 2 hours. To flake, break gelatin into small flakes with a fork and pile lightly into dishes, alone or with fruit or whipped topping.

To prepare gelatin cubes, prepare gelatin as above for flaking. Cut gelatin into small cubes, using a sharp knife that has been dipped in hot water. To remove cubes from pan, quickly dip pan in warm water and remove with lifter. Serve in dishes with whipped topping or fruit, if desired.

To fold whipped topping into partially set gelatin, use a rubber spatula and fold using an over and under motion, being careful not to 'mix' but to 'fold'. For a smooth mixture, be sure gelatin is partially set, not too firm or your mixture will be lumpy.

To whip gelatin, prepare gelatin as directed on package. Chill until slightly thickened. Beat on high speed of electric mixer until light and fluffy, about 3 minutes. Or use 30 Minute Set Method, to 'slightly thickened' and beat as above.
